In 1928, legendary French chef Auguste Escoffier became the first president of the World Association of Chefs’ Societies, a global network of chefs dedicated to maintaining and improving culinary standards around the world. Escoffier and his guard would go on to found the Worldchefs Congress & Expo, a tradition that gathers this widespread network under one roof for a few days every two years.
This month, Kuala Lumpur has the honour of hosting the 38th Worldchefs Congress & Expo which will assemble more than 4,000 chefs, industry leaders, culinary enthusiasts and gastronomes to the Kuala Lumpur Convention Centre from 11-14 July.
It’s an event that underscores Malaysia’s increasing appeal as a global food destination of choice with plenty to offer, from mouth-watering street fare to luxurious fine dining.
90 Years Of Gastronomic Excellence
The biennale congress is the hallmark event of the Association and has been held in a different city each time since 1930. Its arrival in KL marks the first time the prestigious event has been held in a Southeast Asian city and it is expected to draw some 6,000 visitors.
“We are proud to bring the Worldchefs Congress & Expo back to Asia, as it has been hosted by European and Nordic regions in the past. Asia boasts the fastest growing number of members in Worldchefs, and is a very dynamic area,” says Worldchefs’ President Thomas Gulger.
Today, the global body counts over 100 official chefs associations as members, all of which will be sending representatives to Kuala Lumpur for this year’s congress. The opportunity to network with some of the leading minds in the culinary industry, exchange ideas, learn from leaders and create partnerships during the four-day event is immense.
What’s On The Menu?
Chefs across all levels and specialties from 105 countries will be attending the congress, which will see a plethora of forums and discussions on trending topics in the epicurean world taking place. Keynote speakers including TV Personality Peter Kuruvita, Global Master Chef Jochern Kern and Owner of the three Michelin-starred Bo Innovation, Alvin “Demon Chef” Leung are set to divulge their wisdom on various subjects.
Meanwhile, the comprehensive expo will bring visitors up to speed on the latest industry solutions from leading suppliers and elite professionals from the four corners. Explore the latest industrial kitchens, mingle with food producers and restaurant owners, make connections with supply chains, and browse through over some 200 companies exhibiting here. Complementing this will be networking events and educational sessions regarding all aspects of the hospitality industry.
Shaping The Future
Young chefs are encouraged to take advantage of the programme designed by Dr Bill Gallagher and his team. Celebrated chef, mentor and industry icon, Gallagher’s impact on the field is immeasurable, with the training and uplifting of young chefs central to his career. From heading out into KL’s wet markets and listening to iconic speakers, to one-onone sessions with the leaders at the congress, the detailed programme has received critical acclaim the world over.
Another core component of the event is the Educator’s Forum which affords chefs the chance to acquire global certification by Worldchefs, the first and only such accreditation for the culinary industry on a worldwide basis. A variety of educational activities, roundtable discussions, hands-on sessions and the Worldchefs Sustainability Curriculum which will focus on new viable ways to feed the planet rounds out the forum.
The Cook -Off
A heated competition runs in tandem with the congress, played out over the course of the four days in the Global Chefs Challenge, Hans Bueschkens Trophy Global Young Chefs Challenge and Global Pastry Chefs Challenge. Here the cream of the crop will be stepping up to the stoves, hotplates and mixers to show-off their skills in a pressurised environment.
The aim is to produce culinary creations that appeal to the five senses, incorporating modern techniques, knowledge of ingredients, and exemplary plating for ease of service, while meeting the judges’ exacting standards. Those who win take home the respective category titles for World’s Best Chef.
It’s only every two years that the movers and shakers of the culinary world assemble, so as a chef, reaching this event should be a top priority. The chance to rub shoulders with and gain insight from the world’s elite is one that should not be passed up.
